Why do we water the pitch so much?

This definitely contributed to the loss yesterday, as the soaking wet pitch meant McCarthy slipped. I can't see in any way how a wet surface benefits Palace? We don't and never had played a quick passing game, but Liverpool do and this played into their hands. Just seems odd that we insist on having the sprinklers on anytime a match isn't in play?
